Sidebar: A unique Belgian-style ale with moderate bitterness from Hallertauer hops. This beer is spiced with bitter orange peel and coriander. it also includes oats and wheat, and a special non-flocculating yeast which leaves a cloudy, almost-white appearance. Hence, the name Wit (white in Flemish). This is a very refreshing style that has a light, crisp flavor.

Man is this beer good. After a long day of yard work, during a nice session of X-box, or after a good run this is actually a quenching quaffable beer. Some people have suggested the beer is too "citrusy", i suggest they understand the differences between there wheat beers; thier Hefe's and Wit's and Weizens and Dunkels and other fun "off flavored yeast" beers. TO ME a Wit is suppose to be citrusy versus bananay, or clovey, or plummy - you feel?

What? The name? Well it goes a little sumptin' like this - While I was brewing the Wit, after the mash and before I reached boil it began to rain. I MEAN RAIN! So, since I brew outside and was home alone I was in a "situation." So I decided to move everything movable closer to the house in hopes that it would stay dry. So, all but the 9 gallon stock pot full of wort, the turkey fryer it's on, and the propane tank were moved - I can relax. Then the thunder and lightning started. I mean THUNDER! I felt like I should of had that AC/DC soung "Thunderstruck" playing in the background while I yelled at the storm like Lt. Dan from Forrest Gump, it was bizarre! The "boom" from the thunder was so vigourous that it literally sloshed the wort inside of the stock pot, I shit you not. It was waving back in forth a good 6 inches at least three times. It reminded me of being on a third floor apartment on Pennsylvania Ave with a billboard on top in the middle of a wind storm, looking into the toilet and watching the water sway thinking, "Strange things are afoot at the Circle K!?" Hence the name.
